To provide and maintain high service and customer care standards to our guests onboard. A Good Sommelier should also aim to achieve the highest degree of wine service on our ships and generate the revenue that is budgeted for in this area. As a member of the ships' crew you will also be required to hold a position of responsibility within the ships' emergency plan. (Training for your emergency duty will be given). Principal Functions
- Strong sales oriented qualities.
- Strong command of the English language.

- Good verbal communication skills.
- Good body language.
- Traceable and proven experience in wine sales working in fast pace five star environments.
- The ability to describe wine and beverage products in a way that is convincing, pleasant and attractive.
- The ability to up-sell.
- The ability to explore and close on windows of opportunity for increased sales on board (i.e. birthdays, anniversaries, and special occasions).
- The experience of working with an international clientele and the ability to understand and capitalize on their different wine tastes and preferences.
Secondary Functions
- A good knowledge of the products and regions represented by our wine program.
- Been exposed to and worked with wine lists that are truly international in scope and content.
- An interest in expanding their professional horizons by attending courses, seminars and by visiting wineries and wine producing regions.
- A real interest at continuously keeping themselves updated and abreast of the latest trends and developments in the wine industry.
- Manage a station in the dining room by providing great wine service and taking advantage of all opportunities to increase beverage sales.
- Conduct Wine Seminars for our guests.
- Conduct Wine Castings for our guests.
- Conduct Wine Training Sessions for Restaurant and Bar staff.
- Decant properly older vintages, with the showmanship and standards required by traditional wine service.
- Pair wines with food, recommending those that will complement the different styles of cuisine and the different methods of food preparation.
- Organize their mis-en-place before every meal in order to ensure proper service. On the five smaller Seabourn Ships, in addition to the above, any successful candidate needs also to be able to perform successfully the following:
- Organize and supervise wine sales and service in the entire dining room.
- Manage the wine stand according to company policies and controls, which include ?requisitioning, receiving, storing and inventorying product.
Requirements
- The right balance between wine knowledge and working experience.
- At least two years of working experience as a Sommelier in 4/5 star establishments.
- Been successful salesmen in fast pace service environments. This is of the utmost importance since you will be working in dining rooms where the wine stations will be large and service needs to be provided quickly and in an efficient and organized manner.
- Worked with wine lists that cover all the regions represented in our wine program: USA, France, Spain, Italy, Germany, Chile, New Zealand and Australia.
- Diplomas as Sommeliers and have kept up their knowledge by attending regularly seminars, conferences, courses and other wine industry related events.
- All candidates applying with Seabourn Cruise Line need to bring with them the wine lists that they have worked with, or at least the most recent one. These lists will allow the interviewer to see what regions of the wine world is the candidate familiar with from a sales point of view.
- All candidates should bring to the interview proof of their sommelier diploma and/or certificates of attendance to specialized courses, programs, seminars etc.
