2014, 2013 Saveur Culinary Travel Awards
Few elements of a travel experience are more important or more subjective than dining. So when Saveur magazine assembled a panel of high-profile chefs, food writers and restaurant critics to select a Best Culinary Cruise Line for their premier Culinary Travel Awards in 2013, they understood the complexity of the task. Rating a list of nominees across a range of categories, the panel named Seabourn the Best Culinary Cruise Line in 2013, and reiterated their decision in 2014. We are gratified with this repeated honor, because we know what an important part dining plays in the overall sense of hospitality our guests enjoy.
Chef Thomas Keller
In an ongoing quest to provide a world-class experience, Seabourn has created a partnership with world-renowned American chef and restaurateur Thomas Keller. The culinary genius behind a trio of Michelin-starred restaurants – The French Laundry, Per Se, and Bouchon – Chef Keller brings his award-winning French and American cuisine to the ultra-luxury cruise line adding new flavors and flair to complement Seabourn's already celebrated cuisine.
Chef Keller is developing an array of dishes, ranging from appetizers to entrees to desserts for dining venues aboard Seabourn Odyssey, Seabourn Sojourn, and Seabourn Quest. Guests will be able to experience and taste these mouth-watering dishes beginning fall of 2015. The culinary selections will be prepared with the highest quality ingredients that guests can expect from the Thomas Keller Restaurant Group, and to exact specifications, resulting in an unrivaled dining experience like no other at sea.
In addition, Seabourn will partner with Chef Keller to introduce a new signature restaurant that will be revealed in the spring of 2016 on Seabourn Quest before being subsequently rolled out to the entire fleet including the two new builds, Seabourn Encore in 2016 and Seabourn Ovation in 2018. Chef Keller will also advise on various aspects of the line's culinary operations, sharing his expertise and vision with the Seabourn culinary team.

The Thomas Keller Restaurant Group's Chef de Cuisine Devin Knell will lead educational sessions for the Seabourn culinary team in Chef Keller's research and development kitchen based in Yountville, CA. These trainings will go beyond the preparation of a few dishes, delving into what makes Keller's award-winning restaurants consistently excellent to ensure the long-term success of the partnership. Seabourn's executive chefs will lead similar training sessions with their highly-skilled onboard culinary teams to further deliver an authentic dining experience.

The Grill by Thomas Keller
Inspired by the classic American chophouse, The Grill focuses on updated versions of iconic dishes. Guests setting foot inside the elegant dining room will be treated to table-side preparations of Caesar salad and ice cream sundaes as well as a range of other steakhouse favorites like Lobster Thermidor and creamed spinach, presented a la carte. The timeless menu will draw on the freshest products from artisan purveyors. A cocktail program and wine list of domestic and old world labels complement the menu.
Seabourn Encore features for the first time ever a dedicated sushi restaurant on board a Seabourn ship.
Hamachi, tuna, shrimp and other fresh fish products will be shipped from Japan to Sushi and served a la carte for dinner. The menu features caviar and small plates, along with a selection of maki rolls, sushi and sashimi, and salads. In addition, the restaurant will feature three varieties of Bento boxes for lunch: meat, seafood and vegetarian.
Guest at Sushi will also find selections of special Sake, fine matcha teas, and desserts to round out their meal. Sushi’s dining space, located on Deck 8 just off the atrium staircase, is very intimate and beautifully appointed, overlooking over the ocean.
“The décor is all off-white, almost like a very delicate Japanese eggshell. The sushi bar is bespoke with Venetian glass fixtures to create a shimmering effect,” said Seabourn Encore designer Adam D. Tihany.
Another feature of Sushi is there is a private dining table that is secluded from the rest of the restaurant that guests can reserve and enjoy a more intimate experience.
“This will be a great place to enjoy amazing sushi with a small group of friends, and we’re eager for our guests to enjoy it,” said Richard Meadows, president of Seabourn. “Sushi is intended to be a vibrant space that brings another quality culinary choice to an already diverse lineup.”
Sushi will also debut on Seabourn Ovation when it joins the Seabourn fleet in spring 2018. Currently there are no plans to open Sushi on the existing fleet of Odyssey-class ships.
The Restaurant: Before Seabourn, open-seating dining on a cruise ship was unheard of. Come when you like, with whom you please, and be seated as you wish. The room is beautiful, the cuisine is exquisite, and the service is simultaneously flawless, friendly and fun.
Restaurant 2 is an intimate alternative dining venue serving innovative small-plates tasting menus for dinners nightly. Reservations are required due to limited capacity, but there is no extra charge.
The Colonnade is a more casual alternative with indoor/outdoor seating, sumptuous buffets and daily specials for breakfast and lunch. The Colonnade serves regionally-themed, bistro-style dinners with table service nightly aboard Seabourn Odyssey, Seabourn Sojourn and Seabourn Quest.
Aboard Seabourn Odyssey, Seabourn Sojourn and Seabourn Quest, the Patio offers casual poolside dining featuring grilled specialties, salads and sides for lunch and dinner, and freshly baked pizzas throughout the afternoon. Lunches and dinners are offered at the Sky Grill,
