A short walk from the port, hop onto a charming local streetcar (tram) and head to the local market.
You and your guide will shop for fresh ingredients for today's lunch, picking out famous Hakodate salmon and fragrant rock seaweed (iwa-nori). Feel free to explore and add any other seasonal ingredients that catch your eye (at your own expense).
Next, you'll take the tram to a cozy, traditional Japanese house and learn how to prepare an authentic, home-cooked Hakodate meal with your host. This hands-on experience is your chance to discover Japan's food fermentation culture. Using health-conscious ingredients such as shio-koji (salted rice malt), brew a flavorful, authentic dashi broth from premium Hakodate kombu kelp. You'll also make rolled sushi (makizushi), homemade tofu, miso soup, and shio-koji pickles.
As the comforting aroma of dashi fills the kitchen, it's time for your one-of-a-kind Hakodate lunch — chosen and made by you.
Afterward, you will take the tram back to the port.
Please note: This tour is conducted entirely on foot. Tour requires walking and standing. Please realistically assess your physical fitness and ability prior to booking. The trams may be crowded; seating is not guaranteed. Mobility devices (wheelchairs, walkers, scooters, etc) cannot be accommodated on the transportation. Wear comfortable walking shoes. Shade is limited; to avoid sunburn, wear light, long clothing suitable for use as a cover-up. Bring a hat and sunglasses; wear biodegradable/reef-safe sunscreen. Bring bottled water. Bring a light jacket or sweater. Bring local currency or credit cards, as most vendors do not accept US dollars. Tour sequence may vary. Unfamiliar accents can be challenging; feel free to ask your guide to repeat or elaborate on information, and to speak more slowly so you can fully comprehend and converse.
