Your journey begins just a short walk from the port, where you’ll hop onto a charming local streetcar (tram) and head toward a local market.
Once you arrive, it’s time to shop for today's lunch! Together with your local guide, you’ll pick out famous Hakodate salmon and fragrant rock seaweed (iwa-nori). Feel free to explore and add any other seasonal ingredients that catch your eye (available for purchase at your own expense).
After gathering all the fresh ingredients, we’ll take the tram once again to a cozy, traditional Japanese house. Here, you'll learn how to prepare an authentic, home-cooked Hakodate meal alongside locals.
Get ready for a hands-on experience as you discover Japan's rich fermentation culture, using ingredients like health-conscious shio-koji (salted rice malt), and learn how to brew a flavorful, authentic dashi broth from premium Hakodate kombu kelp. Together, we will make rolled sushi (makizushi), homemade tofu, miso soup, and shio-koji pickles. As the comforting aroma of dashi fills the kitchen, it’s time for lunch!
Enjoy your one-of-a-kind "Hakodate Local Lunch"—chosen by you and made by you. Once you’re full and satisfied, we will take the tram back to the port.

This is entirely a walking tour so please realistically assess your physical fitness and ability prior to booking as it contains tram ride and walking portion. The tram might be crowded and availability of seats are not guaranteed. The wheel chair/scooters are not accepted to get on the tram.
Guests are advised to wear comfortable clothing with flat, closed-toe walking shoes, and bring sun protection and a light sweater or jacket from the ship. Japanese Yen is required for any purchases. Tour sequence may vary. Unfamiliar accents can be challenging; feel free to ask your guide to repeat or elaborate on information, and to speak more slowly so you can fully comprehend and converse.
