After departing the port, your first experience will be Maizuru tea. Here, you will learn about Maizuru tea—a local specialty—while enjoying tastings of roasted green tea (hojicha), sencha, and matcha. You will also discover how tea culture took root in the region, the history of matcha, and the characteristics that make Maizuru tea unique. Although the name may be unfamiliar, Maizuru tea is a high-quality tea that has won first place eight times in the National Tea Competition’s “Kabusecha” category. Maizuru has long been known for its riverside soil, which is ideal for tea cultivation, allowing its tea industry to flourish.
After the tea experience, you will move to the Tango Barasushi experience. Here, you will have the opportunity to make “Tango Barazushi,” a beloved local specialty. This unique dish—found only in the Tango region of Kyoto—is characterized by saba-oboro, finely flaked mackerel simmered in a sweet soy sauce. The sushi rice is placed in a shallow wooden box called a matsubuta, then topped with colorful ingredients such as saba-oboro, shiitake mushrooms, shredded omelet, and pickled ginger before being cut and served.
After preparing your barazushi, you will enjoy it along with tempura and other Japanese dishes. Savor the flavors of northern Kyoto, deeply rooted in its regional food culture. After a relaxing dinner, you will return to the port.
