Liguria is home to some of Italy’s most iconic foods. Join your Host on today’s tour behind the gastronomic
scenes of lovely Rapallo.
Known locally as the Pearl of the Tigullio Gulf, Rapallo is a lively seaside resort on the Italian Riviera set around a picturesque bay bobbing with boats. The city prides itself in showcasing the best of Ligurian cuisine, a tradition that capitalizes on the treasures of the mountains and the sea.
After tendering ashore, meet your guide and walk to the nearby motor-boat departure pier. Board a private motorboat and travel from Portofino to Rapallo where you will be met by your host.
A Welcome Aperitif toast of local sparkling wine and Focaccia will be offered, before continuing on to his “bottega”, a veritable emporium filled to the rafters with delicacies such as, cured meats, oils, vinegars, and handmade pasta. Here, your Host will show you how to prepare the mortar-made pesto sauce recipe.
Next the Foodie Tour will move along to Rapallo’s vibrant food market to explore the produce and herbs that are featured in Ligurian recipes. The tour will then pass by an artisanal pasta factory, where a local chef makes traditional stuffed pasta called “pansoto” with market-fresh herbs, a few other ingredients, and his trusty rolling pin. The tour will then continue and pass through the city center visiting different local bottegas. Throughout the tour you will experience tastings of two different local delicacies from the following selection, focaccia formaggio, pansoti, farinata, stuffed vegetables, or fried anchovies (depending on the availability of each locale).
The last stop before returning to the “bottega” will be at a local gelateria for a refreshing sample of one of Italy’s most popular desserts. Once back at the “bottega”. The foodie tour will finish with a tasting of three different aged balsamic vinegars.
